I made this recipe last night and it was absolutely delicious...
Turkey Pumpkin Chili
1 tablespoon vegetable oil
1 cup chopped onion
1/2 cup chopped green bell pepper
1/2 cup chopped yellow bell pepper
1 clove garlic, minced
1.25 lbs ground turkey
1 can diced tomatoes
2 cups pumpkin puree
1 can black beans
1 1/2 tablespoon chili powder
Salt & pepper to taste
Heat the oil in a large skillet over medium heat, and saute the onion, garlic, and bell peppers until soft. Stir in turkey, and cook until evenly brown. Drain excess fat if need be and and mix in tomatoes, pumpkin and black beans. Season with chili powder, salt and pepper. Reduce heat to low, cover and simmer for 20 minutes. Serve with cheese, tortilla chips or sour cream.
